A 14 lb brisket does not feed 14 people at a pound each. It feeds about 21 at a third. This tells you what a raw cut turns into, and what to buy for the plates you need.

Why it exists

Meat shrinks, and it shrinks by different amounts depending on what it is. Brisket gives back about half its raw weight. Ribs hold more. Chicken is different again. Every over-buy and under-buy at the meat counter traces back to not knowing that number.

Start from the plates you need and get the raw weight to buy. This is the direction most people actually need.

Portions you can picture

A yield you can override

Thirty cuts come with a default yield, and you can change it. Your butcher's brisket may trim differently to mine, and after one cook you will know your own number.

What it will not do

Yields are averages, and a heavily trimmed packer or a fatty butt will move the number. That is why the yield is editable.

Questions

Why is brisket yield so low?

Fat renders and moisture leaves. Around half of the raw weight is normal for a whole packer, and a trimmed flat lands differently again.

Does it cover ribs?

Yes, by the rack and by bones per person, which is the only way rib portions make sense.

What portion should I use?

A third of a pound of cooked meat per adult covers most backyard cooks with sides on the table. Move up for a meat-heavy menu.
