Why it exists
Sauce is the easiest thing on the table to make yourself and the easiest to make three times too much of. Scale it to the crowd instead of the recipe and you make what you need, in measures you own, in one pass.
What it does
Five regional sauces, or yours
Kansas City sweet, Eastern Carolina vinegar, South Carolina mustard, Alabama white and Texas mop. Or enter your own and scale that.
Three ways to scale
By how many people are eating, by the volume you want to end up with, or by a straight multiplier on the base batch.
Measures, not decimals
Cups, tablespoons and teaspoons you can pick up, not 1.37 cups.
Jars and shelf life
What it yields, how many jars to wash, and how long it keeps in the fridge, which is not the same answer for a vinegar sauce and a mayonnaise one.

What it will not do
Shelf life assumes the fridge and a clean jar. Alabama white is mayonnaise based and does not keep like a vinegar sauce, and the tool says so where it matters.
Questions
How much sauce per person?
About two ounces for a sauced plate. The tool defaults there and lets you move it if your crowd drowns everything.
Can I can it for the shelf?
These are fridge sauces with fridge timings. Proper canning is a different process with its own safety rules and is out of scope here.
What if I only have some of the ingredients?
Use the custom sauce mode and put in what you actually have. The scaling works on any recipe you type in.
