Why it exists

Every pit problem has been solved before, usually by someone standing exactly where you are standing with the lid in one hand. This is that knowledge sorted by symptom instead of by chapter, so you can find the answer in the ninety seconds you actually have.

What it does

Starts from what you can see

White smoke. Bark that will not set. Temperature climbing away from you. Rubbery chicken skin. Type it or tap it.

Causes in order of likelihood

Not a list of everything it could be. The thing it usually is, first.

Two answers, every time

What to do in the next ten minutes, and what to change on the next cook so it does not happen again.

Safe temperatures on hand

The USDA safe minimums and the probe-tender targets are right there, because half of all pit panic is really a doneness question.

Three steps, start to finish

Tap the symptom, or type a word like "stall" or "bitter".

Read the fix for right now and go do it.

Read the next-time note when the cook is over and you have a beer in your hand.

Who it is for

Newer cooks who hit a wall mid-cook, and experienced cooks working on an unfamiliar pit. The first week with a new offset is where this earns its keep.

What it will not do

It cannot see your fire. If something is genuinely unsafe, a grease fire or a cracked gas line, put the tool down and deal with the fire.

Questions

Is this just a list of articles?

No. Every symptom has the same shape: causes, the fix now, the fix next time. You are never reading past the answer to find it.

Does it cover my cooker?

The fixes call out where a kettle, an offset, a pellet grill or a gas grill needs a different move, because the same symptom often has a different cause on each.

Can I use it away from the pit?

Yes, and you should. Reading the stall entry the night before a brisket is cheaper than reading it at 2 p.m. with the meat stuck at 158°F.
