Smoked Pork Tenderloin
The fastest smoking win on the menu. Pork tenderloin picks up smoke quickly, stays juicy when pulled at the right temp, and works as a weeknight cook or a feed-a-crowd prep.
Ingredients
- 2 pork tenderloins (1-1.5 lbs each)
- 2 tbsp olive oil
- 1.5 tsp kosher salt
- 1 tsp coarse black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp cumin
- Apple or cherry wood chunks
Method
- Remove the silverskin from each tenderloin using a sharp knife. Silverskin will not render and turns rubbery.
- Coat with olive oil. Mix the dry seasonings and apply evenly on all sides.
- Set the pit to 250–275°F with apple or cherry wood for a mild, sweet smoke.
- Place tenderloins directly on the grate. Rotate once halfway through cooking.
- Cook until the internal temperature reaches 145°F. Total cook time is typically 1 to 1.5 hours.
- Rest uncovered for 8-10 minutes. Slice into 1-inch medallions and serve immediately.

Pork tenderloin is extremely lean and overcooks quickly. Verify 145°F in the thickest part with a food thermometer, then rest it for at least 3 minutes before slicing. This preserves moisture while following the safe whole-pork standard.
