Put It Into Practice
- Use an instant-read thermometer for all cooks. Do not rely on color, feel, or time alone.
- For tender cuts, use a food thermometer and cook to the approved internal target before removing the food from heat; do not rely on carry-over cooking to reach the minimum safe temperature.
- For collagen-rich cuts (brisket, pork shoulder, short ribs): begin checking for probe tenderness around 200–205°F. Texture, not temperature alone, determines when these cuts are finished.
- Insert the probe into the thickest part of the muscle, away from bone and fat. Bone conducts heat and reads higher than the meat.
- For whole birds: verify 165°F in the thickest part of the breast and the innermost thigh and wing, keeping the probe away from bone.
- Test brisket and pork shoulder by probe feel, not just temp. The probe should slide in with no resistance — like warm butter.

Texture targets: brisket and pork shoulder often become probe-tender around 200–205°F; pork ribs around 195–203°F; chicken thighs around 185°F for tenderness. Safety minimums: all poultry must reach 165°F; whole beef and whole pork must reach 145°F followed by at least a 3-minute rest. Verify temperatures with a food thermometer.
Use your equipment manufacturer's instructions, keep the cooker outdoors on a stable noncombustible surface, and verify food temperatures with a calibrated thermometer.
